MEET TINA

Hi, I’m Tina, a work at home mom, food blogger, recipe developer and the woman behind Mommy’s Kitchen!  I live in Texas and my blog features old-fashioned classics, comfort food and family recipes that are easy on your budget. My goal is to get families out of the fast food line and back to the dinner table, family style, with easy, delicious recipes.

HOMEMADE PIZZA SAUCE

1 (15 oz.) can Tomato sauce
1 (6 oz.) can Tomato paste 
1 Tbsp. Olive oil
2 cloves Garlic, minced
¼ cup Onion, minced
1 Tbsp. Dried oregano
1 tsp. Sugar
Salt to taste

In a 10-12 inch skillet, heat one tablespoon olive oil over medium heat. Add minced onion and garlic and sauté until the onion is translucent and tender. Remove from heat and set aside. 

In a blender or food processor, combine all the ingredients, including the onion and garlic, and pulse until the sauce is smooth.  Pour in a jar to cool and store in the fridge for up to a week, or use right away!

Pizza sauce can also be frozen. Spoon sauce into ice cube trays and freeze. Once frozen, remove from ice trays and place into small Ziplock bags.  Use five cubes for one large pizza.

TIME SAVING COOKING TIP

To easily slice cherry tomatoes in half for salads and other recipes, place a handful of tomatoes on a plate or lid. Add another plate or lid on top. Place your hand on the top and gently press down. Slide a knife between the middle opening of the two plates and cut the tomatoes. This cuts them all in half at one time!

PIZZA PASTA SALAD

Servings 7-8

1 (8 oz.) package Spiral garden pasta, cooked al dente
1 (10.5 oz.) container Red tomatoes (cherub, cherry or grape)
1 (2.25 oz.) can Sliced black olives, drained
1 (8 oz.) jar Marinated artichoke hearts, drained and cut in half
7-8 String cheese, sliced
½ cup Sliced pepperoni, mini pepperoni, Genoa salami or turkey pepperoni
⅔ cup Green, yellow or orange bell peppers, roughly chopped
¼ cup Red onion, chopped
½ cup Grated Parmesan cheese
1 (8 oz.) bottle Prepared Italian dressing (use your favorite brand or homemade)
Italian seasoning to taste
Garlic powder to taste
Salt and pepper to taste

In a large pot of salted water, cook pasta according to package directions, until al dente. When pasta is cooked, drain; rinse in cold water to stop the cooking process.

In a large bowl combine the tomatoes, black olives, artichoke hearts, sliced string cheese, pepperoni, peppers, red onion and grated Parmesan cheese.

Add the cooled pasta and mix well. Add the seasoning and Italian dressing; toss to mix. Chill at least one hour before serving. Sprinkle with additional Parmesan cheese before serving.
